Ancient Slavic dish with pagan roots

They are central to the holiday of Maslenitsa (Pancake Week), celebrating the end of winter (early March)
Other occasions to eat blini were at funerals and prayers for the dead.
Ingredients:
2 eggs
3 cups milk
1 Tbsp sugar
1 pinch salt
2 cups flour
1-2 Tbsp oil
1 tsp vanilla
Sparkling water
Recipe:
Whisk eggs with sugar, salt, and milk. Gradually whisk in flour until smooth, ensuring it has the consistency of heavy cream or thin yogurt. Whisk in the oil. The trick is to add sparkling water at the very end before backing to create bubbles and as a result holes in the blintzes.
Cook the Crepes: Heat a lightly buttered skillet over medium-high heat. Pour in about 1/4 cup of batter, swirling quickly to cover the bottom thinly. Cook until edges lift and the bottom is lightly brown, then flip and cook for another 30 seconds.
